Ingredients

  • 1 ½ cups of all-purpose flour
  • 1 ½ teaspoon of baking powder
  • ½ teaspoon of cardamom
  • 1 teaspoon of lime zest
  • 1 tablespoon of vanilla
  • ½ cup of mala (room temperature)
  • ½ cup of oil
  • 3 eggs
  • 6 tablespoons of sugar
  • 1 ½ tablespoons of sweetened cocoa

To make this cake, you will need two bowls. In one bowl, you will mix the dry ingredients: flour, lime zest, cardamom, and baking powder. In another bowl, you will mix the wet ingredients: vanilla, mala, oil, and eggs. Then you will combine the two mixtures and stir well.

Next, you will divide the batter into two parts. One part will stay as it is, and the other part will have some cocoa powder added to it. This will create the chocolate batter for the stripes. Then you will pour the two batters alternately into a greased and dusted bread pan, creating layers of vanilla and chocolate. You will also use a skewer to swirl the batter and create a wavy pattern.

Then you will bake the cake in the oven at 190 degrees Celsius for 45 minutes. You will check if it’s done by inserting a skewer into the cake. If it comes out clean, then your cake is ready. You will let it cool slightly before slicing and serving.
